Abstract

Scopul şi obiectivele lucrării: studierea încărcăturii microbiene a laptelui de vacă și capră în normă proaspăt și după 2 și 4 zile de refrigerare. Obiectivele cercetărilor: 1. Stabilirea indicilor numărului de germeni în produsul alimenatar lapte; 2. Evidențierea indicilor saprofiți și patogeni; 3. Interpretarea rezultatelor referitoare la identificarea germenilor după testul reductazei cu rezazurină și albastru de metilen; Semnificația teoretică:Sunt redate rezultatele cercetărilor laptelui de vacă și capră și interpretarea gradului de poluare a acestora; Valoarea aplicativă a lucrării determină înregistrarea indicilor care să reflecte calitatea sortimentelor de lapte investigat.
