Scopul cercetărilor realizate în Laboratorul de Biotehnologii Alimentare al Institutului ŞtiinţificoPractic de Horticultură şi Tehnologii Alimentare a fost prepararea şi evaluarea proprietăţilor fizico-chimice şi organoleptice ale semifabricatelor din carne de ovină, îmbogăţită cu adaosuri de şrot (10%) din seminţe de nuci, dovleac, in şi struguri. Semifabricatele preparate (mici) au fost păstrate în frigider la 0…+40C, timp de 5zile. Pe parcursul păstrării în stare refrigerată timp de 72 ore s-a constatat reducerea umidităţii şi a indicelui capacităţii de legare a apeila mostrele de mici, fracţia masică de sare şi grăsime modificându-se neesenţial şi rămânând practic la acelaşi nivel. Analizele microbiologice au arătat lipsa bacteriilor coliforme, a bacteriilor patogene, inclusiv a salmonelelor şi colstridiilor sulfit-reducătoare. Pierderile de masă în rezultatul tratamentului culinar (coacere în cuptorul electric) au constituit: 9,8% (mici cu şrot din seminţe de nuci), 16,3% (dovleac), 15,9% (struguri) şi 46.2% (martor, fără adaos de şrot). Cele mai bune caracteristici organoleptice le au probele cu şrot din seminţe de nuci, cu nota medie de 4,66.; The purpose of researches conducted in the Laboratory of Food Biotechnology of the ScientificPractical Institute of Horticulture and Food Technology was to prepare and evaluate physico-chemical and organoleptic properties of the semi-processed ground mutton (rolls) productssupplemented with walnut, pumpkin, flax and grape seed cakes (10%). The prepared semi-processed products were kept in a refrigerator at the temperature of 0 ... + 4°C for 5 days. During 72 hours of storage in refrigeration conditions it was recorded a decrease of humidity and water-binding capacity index in roll samples. Salt and fat mass fraction changed insignificantly and remained practically atthe same level. Microbiological analyzesshowed no coliform bacteria, no pathogenic bacteria, including  Salmonella and sulphite reducing clostridia. Mass loss as a result of heat treatment (baking in an electric oven) constituted: 9.8% (rolls with walnutseed cakes), 16.3% (pumpkin), 15.9% (grapes) and 46.2% (control variant, without added cake). The best organoleptic characteristics have been recorded by the samples with walnut seed cake, obtaining the average score of 4.66.

В статье приведены данные относительно видового и количественного состава популяции зоофильных мух, выявленных в результате паразитологического и эколого-эпизоотологического обследования птицеводческих хозяйств по разведению птицы (кур) яичного и мясного направлений продуктивности. Комплексом энтомологических обследований в течение технологического цикла выращивания птицы, независимо от производственного направления хозяйства, было установлено, что доминантным видом оказались мухи Musca domestica. В тоже время, стоит отметить наличие следующих видов: Musca vitripennis, Muscina stabulans, Fannia canicularus, Calliphora vicina. Для инсектицидных обработок предложен комплекс препаратов отечественного производства, направленных на обезвреживание и уничтожение насекомых на различных стадиях метаморфоза.; The paper presents data on the species and quantitative composition of the population of zoophilic flies identified as a result of the parasitological and environmental epizootic investigation of the poultry farms raising chickens for eggs and meat. Based on complex entomological investigation during the technological cycle of poultry breeding, regardless of the direction of production, it was determined the dominant species of flies - Musca domestica. At the same time, it is important to mention about the presence of the following types of insects among the identified and studied ones: Musca vitripennis, Muscina stabulans, Fannia canicularus, Calliphora vicina. For insecticidaltreatments, it was recommended a complex of locally produced preparations aimed at controlling and destroying insects at various stages of metamorphosis.

В работе представлены результаты исследований сезонных колебаний показателей природной неспецифической резистентности сыворотки крови лошадей Гуцульской породы традиционных приусадебных хозяйств в сравнении с аналогичными показателями Гуцульских лошадей, содержащихся в конюшнях племенных хозяйств, а также по системе «улучшенная табунная» в национальном природном парке «Гуцульщина». Для изучения не специфической резистентности животных в цельной крови определяли индекс завершенности фагоцитоза, в сыворотке крови - бактерицидную и лизоцимную активности. Установлено, что условия содержания лошадей накладывают отпечаток на показатели не специфической резистентности организма. Бесспорными являются проявления сезонных колебаний этих показателей. Так, в целом, в летнюю пору очевидное преимущество по анализированным показателям принадлежит лошадям, содержащимся совместно с другими животными, что имеет место в традиционных приусадебных хозяйствах. При условиях содержания животных в племенных хозяйствах с конюшенной системой, изученные гуморальные показатели относительно стабильны в течении всего года и, что особенно важно, высокими остаются и весной, тогда как при других способах содержания животных бактерицидная и лизоцимная активности весной существенно снижены.; The paper presents the results of researches on seasonal variation of indicators of natural nonspecific resistance of blood serum of Hutsul breed horsesfrom traditional backyard farms compared with analogous indicators of Hutsul horses kept in stables in horse breeding farms, as well as of horses managed as “improved taboon” system in the National Nature Park “Hutsulshchina”. In order to study the nonspecific resistance of animals the phagocytosis completeness index was determined in the whole blood and bactericidal and lysozyme activity - in the blood serum. The keeping conditions have an impact on the indicators of body’s nonspecific resistance and seasonal variation of these indicators is indisputable. Therefore, in general, in summer, an obvious advantage, according to the analyzed indicators, belongs to the horses kept together with other animals in traditional backyard farms. In the animals kept in breeding farms with stable husbandry system, the studied humoral indicators showed a relative stability throughout the year and, more importantly, they remain at a high level also in spring, whereas under the other keeping conditions, bactericidal and lysozyme activity are reduced significantly in spring.

S-a studiat componenţa microflorei intestinale la puii de găină sub acţiunea unor produse cu efect probiotic şi antibiotic. Puilor de găină de rasa Rhode Island (4 loturi a câte 20 de pui fiecare) le-au fost administrate: biomasă produsă de streptomicete (1g/kg), lichid cultural de streptomicete (1ml/pui), oxitetraciclină în apa de băut(1 g/l apă) şi preparatul Immunobak (0,2 g/pui). La vârsta de o zi, 15, 55 şi 75 de zile au fost prelevate lavaje de la nivelul mucoasei intestinale şi au fost efectuate însămânţări pe medii nutritive (Bismut sulfit agar, agar peptonat, Endo, Levin) pentru evaluarea indicilor microbiologici. S-a stabilit că odată cu vârsta puilor creşte şi încărcătura bacteriană. Numărul de colonii obţinute din lavajele colectate de la pui la vârstele de 55 şi 75 de zile este aproximativ identic, cu o marjă a variaţiei nesemnificativă. Microflora intestinală este alcătuită într-o proporţie mai mare, din bifidobacterii, streptococi şi E. coli, mai puţin reprezentative fiind coloniile de tulpini de Bacteroides şi Enterococcus.; The composition of intestinal microflora in chickens under the influence of some products with probiotic and antibiotic effect was studied. The chickens of Rhode Island breed (4 groups of 20 chickens each) received: biomass produced by streptomycetes(1g/kg), culture liquid ofstreptomycetes(1ml/chicken), oxytetracycline in the drinking water (1 g/l of water) and the preparation Immunobak (0.2 g/chicken). Atthe age of 1 day, 15, 55 and 75 days,lavages of intestinal mucosa were taken and inseminations on nutritive media were performed (Bismuth sulfite agar, peptone agar, Endo, Levin) with the purpose of assessing microbiologicalindicators. It was established that bacterial load increases with age of the chicks. The number of colonies obtained from the lavages collected from chickens at the age of 55 and 75 days are almost identical, with a small insignificant variation. Intestinal microflora consists of a great proportion of bifidobacteria, streptococci and E. coli, the colonies of Bacteroides and Enterococcus strains being less representative.
